For me, the trajectory of the day depends a lot on how the morning goes. When I start off with a healthy, mindful meal, I tend to make better choices throughout the day. I’ve been gathering recipes for healthy breakfast options and have found lots of inspiration in Tori Kendrew’s instagram feed. A health coach and maker, Tori shares shots of her breakfast bowls and her beautiful handmade products over at @kitchenandkraft.

Her morning breakfast bowls are such a wonderful way to start the day and today she’s sharing her recipe for a Blueberry Acai Bowl!

Blueberry Acai Bowl

Ingredients:
– 2 handfuls baby spinach
– 1 Tablespoon chia seeds
– 1 Tablespoon acai powder (I use Navitas Naturals brand)
– 1/2 cup water
– 1 small banana, cut into chunks and frozen
– 1 cup frozen blueberries
Method:

Place spinach, chia seeds, acai powder and water in a high speed blender. Blend on high until combined. Next, add frozen banana and blueberries to the blender and blend until a smooth, creamy consistency is achieved. Pour into a bowl and decorate with toppings of choice. I love banana, strawberries, buckwheat groats, bee pollen, shredded coconut and dried persimmons. Nuts, seeds, cacao nibs and berries are also super delicious and beautiful additions. Experiment with what combinations you like best, the possibilities are endless!
